We just celebrated our second Gotcha Day on April 12th. It is hard to believe we have been a family for two years now! These years have been filled with blessings and challenges. We continue to work to teach the kids what it means to be a part of a happy and loving family. We are united and more settled this Gotcha Day compared to last year. We look forward to seeing what the next year brings for our kids and our family.
Because the kids were in school this year, we made our celebration at dinner time. We made caldo soup, arepas, and enjoyed Colombian candy and arequipe on waffle wafers for desert. Caldo is a soup the kids ate quite a bit in Colombia for their breakfast. It was so easy to make and know we will make it again soon. You make it with potatoes, onions, cilantro, milk, water, and scrambled eggs. It turns into a creamy soup. Arequipe with wafers is similar to eating caramel on waffle cones. We did a great job giving the kids lots of sugar before sending them off to bed! Here are some of the pictures of the kids making the arepas and then enjoying the arepas and caldo soup.
